Hiya pals! Easter is right around the corner. When I was a kid (and every year since...), I loved dying eggs! I also loved making stuff with the colorful hard boiled eggs. One of the first things I remember making on my own as a kid was deviled eggs. Not a lot of knife skills needed and mixing was fun.
Hard boiled eggs were a staple for me when I first stopped being a vegan. They were easy to have on hand to add to salads or eat as a snack. I have a nifty machine (this one is way fancier than mine is, but close) that makes perfect hard boiled eggs. Here is a guide if you need to cook them on the stove.
Ingredients:
For basic recipe
- A dozen hard boiled eggs
- 1/2 a cup of mayonnaise
- 1 tablespoon of Dijon mustard
- Crack and peel hard boiled eggs.
- Cut eggs in half the long way.
- Scoop out yokes and place in a bowl.
- Mix yokes with mayo and mustard.
- Scoop yoke mixture into a resealable bag or frosting device.
- If using a resealable bag, cut one of the corners.
- Squeeze yokes back into the whites.
- Enjoy!
For dill recipe
- A dozen hard boiled eggs
- 1/2 a cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1 tablespoon fresh dill
- Crack and peel hard boiled eggs.
- Cut eggs in half the long way.
- Scoop out yokes and place in a bowl.
- Chop dill.
- Mix yokes with mayo, mustard and dill.
- Scoop yoke mixture into a resealable bag or frosting device.
- If using a resealable bag, cut one of the corners.
- Squeeze yokes back into the whites.
- Add some dill to the tops for garnish.
- Enjoy!
For spicy recipe
- A dozen hard boiled eggs
- 1/2 a cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1 tablespoon hot sauce of your choice
- Crack and peel hard boiled eggs.
- Cut eggs in half the long way.
- Scoop out yokes and place in a bowl.
- Mix yokes with mayo, mustard and hot sauce.
- Scoop yoke mixture into a resealable bag or frosting device.
- If using a resealable bag, cut one of the corners.
- Squeeze yokes back into the whites.
- If you like it really hot add a few drops of hot sauce right on top of the eggs.
- Enjoy!
I also deviled some quail eggs. I found them at an Asian market near my house. They are hard to peel but sooooo cute! The shells are kinda blue, the pictures dont do them justice. I learned how to hard boil them here. I just eyeballed how much mayo and mustard to use for these cuties.
