Deviled Eggs 3 Ways

Hiya pals!  Easter is right around the corner.  When I was a kid (and every year since...), I loved dying eggs!  I also loved making stuff with the colorful hard boiled eggs.  One of the first things I remember making on my own as a kid was deviled eggs.  Not a lot of knife skills needed and mixing was fun.  

Hard boiled eggs were a staple for me when I first stopped being a vegan.  They were easy to have on hand to add to salads or eat as a snack.  I have a nifty machine (this one is way fancier than mine is, but close) that makes perfect hard boiled eggs.  Here is a guide if you need to cook them on the stove.


Ingredients:


For basic recipe
  • A dozen hard boiled eggs
  • 1/2 a cup of mayonnaise
  • 1 tablespoon of Dijon mustard
  1. Crack and peel hard boiled eggs.
  2. Cut eggs in half the long way.
  3. Scoop out yokes and place in a bowl.
  4. Mix yokes with mayo and mustard.
  5. Scoop yoke mixture into a resealable bag or frosting device.
  6. If using a resealable bag, cut one of the corners.
  7. Squeeze yokes back into the whites.  
  8. Enjoy!


For dill recipe
  • A dozen hard boiled eggs
  • 1/2 a cup of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon fresh dill
  1. Crack and peel hard boiled eggs.
  2. Cut eggs in half the long way.
  3. Scoop out yokes and place in a bowl.
  4. Chop dill.
  5. Mix yokes with mayo, mustard and dill.
  6. Scoop yoke mixture into a resealable bag or frosting device.
  7. If using a resealable bag, cut one of the corners.
  8. Squeeze yokes back into the whites.  
  9. Add some dill to the tops for garnish.
  10. Enjoy!

For spicy recipe
  • A dozen hard boiled eggs
  • 1/2 a cup of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon hot sauce of your choice
  1. Crack and peel hard boiled eggs.
  2. Cut eggs in half the long way.
  3. Scoop out yokes and place in a bowl.
  4. Mix yokes with mayo, mustard and hot sauce.
  5. Scoop yoke mixture into a resealable bag or frosting device.
  6. If using a resealable bag, cut one of the corners.
  7. Squeeze yokes back into the whites.  
  8. If you like it really hot add a few drops of hot sauce right on top of the eggs.
  9. Enjoy!


I also deviled some quail eggs.  I found them at an Asian market near my house.  They are hard to peel but sooooo cute!  The shells are kinda blue, the pictures dont do them justice.  I learned how to hard boil them here.  I just eyeballed how much mayo and mustard to use for these cuties.
