
Happy Friday to all my foodie friends! Eleganza, fabulousity, DRAMA! These are all words that should be coming to mind when you tell your friends that you know how to make a frittata. The word just sounds supes fancy, so it's impressive, but I honestly feel like it's just one of those recipes that are a must know.
Before I start this recipe, I have a confession. I need to come clean. I am addicted. Addicted to B R E A K F A S T. Remember when Ennis says to Jack, "I wish I knew how to quit you." That's my life when it comes to breakfast. I know I should branch out, but I can't handle how perfect breakfast is in this world. Give some eggs, and watch me be the happiest person in the world.
INGREDIENTS
*this recipe is made for an 8" cast iron skillet
4 Whole Eggs
2 Egg Whites
1 cup of ground sausage, browned
1/3 cup crumbled feta cheese
1/4 cup milk
Handful of Kale, ripped into small pieces
Ground Black Pepper, to taste
Kosher Salt, to taste
MAKE IT HAPPEN
Start by pre-heating the oven to 350°
In a large mixing bowl, combine eggs (both whole and whites), milk and salt & pepper. Mix until light yellow color throughout.

With the cast iron skillet, put a slight coat of oil over it. Brown the sausage in the skillet then pour the egg mixture over top. Add in the feta cheese and kale. Let sit on stovetop for approximately 5 minutes. You'll see the sides start to set. When it's set, it's ready for the oven!
Bake in the oven for about 15-20 minutes, You'll know it's done when the top is set and has a nice golden look. The frittata will also start to pull from the edges of the skillet.
Let stand five minutes (and don't touch the handle - lesson learned!).
I served this dish with some salsa, and it was so good. Knowing how to use eggs in different ways is so much fun, especially because they have SO MANY USES! The Frittata is a great recipe to know because if you know the basics, you can do all sorts of add-ins. I was thinking one with some baby reds and peppers would be amazing. My mom loves to add mushrooms and onion to hers. It's all about your taste preferences!
