Happy Monday foodie friends!! This heat is officially putting me through it. I have a hard time wanting to eat anything heavy because it seriously just hurts in 97˚ weather. If you're like me maybe a nice wrap sounds good to you. How about one with a little bit of bacon and pineapple? Sold? Me too!
You know I love my pineapple, you could probably find a few posts with pineapple as a central ingredient of mine. I guess this wrap is very BLT, but instead of L & T we have P & S. It's a BPS Wrap. I'm into it!
WHAT YOU'LL NEED
• Flour Tortillas
• Bacon, fully cooked
• Sliced Pineapple
• Teriyaki Sauce
• Baby Spinach
• Mayonnaise
• Swiss Cheese
INSTRUCTIONS
Start by heating the pineapple up on the stove with the teriyaki sauce. You only need to do this for a few minutes. Just long enough to get the pineapple crispy. It also lets the pineapple absorb some of the teriyaki sauce.
On a tortilla, spread out a layer of mayonnaise and then cover with the spinach.
Top with the cooked bacon and pineapple.
Cover with swiss cheese. Wrap it up and enjoy!
Easy, delicious and light. Exactly what I need on a hot summer's day.
