Super Simple Bean and Lettuce Wraps Recipe


I'm about two weeks into my Prediabetic Journey, and I've lost about 10 lbs according the my bathroom scale. My scale, mind you, gives me a different weight depending on the position of my arms (on my hips, hanging by my side, etc.) so I highly doubt its accuracy. Either way, though, there's been some results. It's certainly the combination of eating less and moving more. Once you get started, it can be quite addicting. Of course, I've had days where I break down and eat a piece of pizza, a burger, or a donut. I don't want to live life without tasting things I love, so I don't dwell on it, and I just continue my progress the next day.

My biggest successes have been with breakfast and lunch where I've consistently removed animal products including meat, dairy, and eggs as well as baked goods like bread. Eating plant-based foods can be satisfying when you pick the right ones like beans, for example. This week I'm sharing one of my new go-to lunches- Super Simple Bean and Lettuce Wraps.

This is the type of recipe you can throw together in the morning before work without making a mess or running late. You can also pack up the beans the night before and just add the lettuce in the morning. I love quick and easy meals like this because it doesn't feel like I'm disrupting my day. Eating better can be convenient, who knew?



For my wraps, I like to use white beans or black beans. Pinto beans and kidney beans just don't have the right texture and flavor to be eaten cold, but white and black are delicious this way. I also used two products from one of my new favorite brands- Bragg. Liquid Aminos 16 oz. 16 Ounces (found on Amazon for around $7) is very similar to soy sauce except with less sodium and a unique delicious flavor. I also used Bragg Organic Seasoning, Sprinkle (24 Herbs & Spices), 1.5 Ounce (found on Amazon for about $6) which has a great aroma and adds a medley of herbs and spices with minimal effort.


An important part of preparing this meal is to wash your lettuce. When you buy produce from a grodery store, or anywhere really, you never know who may have touched it. Please wash your produce and shake it off in the sink so it's not dripping wet when you eat it. I like to lightly spin mine a salad spinner to dry it.

Once your lettuce is cleaned, mix up your beans, aminos, herbs, and diced carrots to make a healthy and filling lunch for two people or two days for one person. I recommend keeping the bean mixture separate from the lettuce until you're ready to eat so the lettuce doesn't get too soggy.

It's a super simple recipe to whip up before work and eat without utensils. Since I sit all day, I like to stand and eat it in the work kitchen then head outside for a relaxing walk. What do you like to do for lunch?

Super Simple Bean and Lettuce Wraps
A quick and easy, yet healthy, lunch
Ingredients
  • 4 Lettuce leaves
  • about 2 cups Canned beans
  • 1 tbsp Bragg liquid aminos
  • about 6 Baby carrots, diced
  • 1 tsp Dried herbs
  • 1 tsp Coarse ground black pepper
Instructions
1. Rinse lettuce leaves and set aside.2. In a small bowl, combine beans, liquid aminos, and herbs.3. Mash the bean mix and combined the mix in the diced carrots.4. Spread 1/4 of the mix on a lettuce leaf and repeat until the mixture is used.5. Curl the lettuce around the bean mixture and eat. No utensils required!
