Remember when I told you that I love cauliflower? It's still true. If you need a reminder you can check out this cauliflower soup recipe that I did earlier this year. And if you do read it, you'll notice I said I #CantStand onions, but I've recently changed my ways. Additionally, chicken and cauliflower are my ideal pallet apparently. Finally, a bit of warning. Do not make this on a hot summer night. I was inspired, but maybe you can hold off for a night that isn't in the high 80s.
I was perusing Pinterest late at night when I couldn't sleep as one does. I was looking at different types of cauliflower recipes, and then I saw a mac and cheese made with cauliflower, and I knew I wanted to make something similar.
I was originally going to just try making that, but then I thought that something layered would be even better. So off to brainstorming I began.
In hindsight I actually should have added bacon to this recipe as well, but that would have been too on the nose. However, I do actually encourage you to do that. I will say that the addition of spinach was fantastic! It gave it a little more color and flavor.
Finally I just have to endorse the side of salsa with this dish. It's that final bit of flavor that get's this right to perfection. Trust me. I know it sounds weird, but it's honestly divine.

Chicken Cauliflower Bake
A cheesy, tasty oven baked dish that's good any time of the year.
Ingredients
- 5 chicken tenders
- 1 head cauliflower
- 2 handfuls spinach
- 2 cups cheese
- 1 cup sweet onion, chopped
