Hello again food friends! I don’t know where you are, but it’s
definitely been on the colder side here in Portland lately. I find that on
those days when I’m chilled to the max, I’m looking for something homemade to
warm me right up! One of my favorite warm weather dishes with my spirit food is
Baby Reds and Chicken in the oven. It’s a simple dish that will leave you
feeling warm and full.
Baby Reds (put as many as you want I usually do about 6-8 for our family)
Thawed Chicken thighs (again, enough to feed your family)
1 Can of Swanson’s Chicken Broth
2 TBSP Dried Onion
Seasonings of your choice
Directions:
Pre-heat the oven to 375 degrees.
Start by rinsing and then slicing up the baby red potatoes into thin pieces. Place
the chicken thighs and baby red potatoes into an oven safe dish. Add the can of
Swanson’s broth to the dish making sure to evenly pour over entire dish. Add
the dried onion and any additional seasonings you wish and then place into the
oven.
Bake for about 70 minutes, serve and enjoy (simple salads
are a great counterpart)
