Vanilla Bean French Toast with Fresh Berry Sauce

Last and this week my fellow bloggers and I have been celebrating mothers with some brunch-themed delights. Since I know my mother likes fancy things, I decided to use vanilla beans in my own french toast recipe. Besides making my mother the delicious brunch that I will show you below, I also bought her some Pandora beads and took her plant shopping. Sometimes I like to spoil my mother, and you should do the same. Start by following my recipe!

Mother's Day Breakfast in Bed: Vanilla Bean French Toast with Fresh Berry Sauce recipe




You'll Need (makes 4 servings)

For the toast:
4 pieces of thicker bread
3 eggs
1/2 cup of heavy whipping cream
1 vanilla bean
2 Tbsp of butter

For the sauce:
1/4 cup of white sugar
2 Tbsp of butter
1 cup of chopped strawberries
1/3 cup each of blackberries, raspberries, and blueberries)
1/8 cup of all-natural berry juice

Make it

1. Scrape the inside out of the vanilla bean. Watch this video for help.

2. Prepare the berries by removing any leaves and thoroughly washing them.

3. Melt Butter in a small sauce pan over medium heat and add sugar. Mix sugar and butter until well combined.

4. Add the berries and juice to the sugar and butter in the sugar pan and lower heat. Allow the berries to cook for about 20 minutes or until they begin to break down and look like sauce (see 2nd photo below).


5. While the berry sauce is cooking, combine eggs and heavy whipping cream in a small bowl and whisk until eggs are beaten.

6. Add the scrapings from the vanilla bean and whisk until well combined. The black speckles should be dispersed throughout the mixture.

7. Pour the vanilla bean coating mixture into a wide and shallow dish.

8. Heat a pan or skillet to medium and melt 2 Tbsp of butter.

9. Place a piece of bread in the coating and flip. Allow each side to soak for about a minute.



10. Cook the toast on the buttered skillet. Flip after about 2-3 minutes of cooking on each side, depending on the temperature of your cooking surface.

11. When toast is cooked on both sides, place on a plate and top with your fresh berry sauce. Sprinkle with a bit of powdered sugar and add a few uncooked berries if you had extra. Voila!
