Stuffed Baked Apples


Hey everyone, it's Kayla again! It's starting to feel like we're old friends, right? Thanks to the Blog To Taste gang for having me back yet again. This time I'm back with a super special Holiday edition! I don't know about you, but I love this time of year. The crisp air, the cheerful music, shopping excessively without feeling bad about it.

My favorite part though, is getting to spend time with family that I may only see a couple of times a year otherwise, so why not wow them with a dish that is incredibly easy but sure to impress? I've got a dessert for you that's perfect for any holiday meal. It's quick, easy, and offers a big wow! factor with minimal effort! Here's my alternate take on a traditional apple, stuffed baked apples!



What you'll need:
4 large apples (any variety, just make sure they're big! I used Jonagolds)
1/3 cup packed brown sugar
1/4 cup currants (may substitute with diced raisins)
1/4 cup pecans, chopped
1 tsp cinnamon
4 pads of butter
1/2 cup boiling water
French vanilla ice cream (optional required)



Step 1: Preheat oven to 375 degrees. Remove core from apple. I used an actual apple corer but a knife works just as well! Next, take a melon baller or spoon to hollow out the apple, widening the hole at the top, and forming a larger well about halfway down.

Step 2: Combine brown sugar, currants, pecans, and cinnamon in small bowl.

Step 3: Put apples in a baking dish. Distribute brown sugar mixture evenly between the four apples, add one pad of butter to the top of each apple.



Step 4: Add boiling water to bottom of the baking dish. Bake apples on 375 for 30-45 minutes. Check firmness after 30 minutes. If you wish for a more tender apple, leave in closer to 45 minutes.

Step 5: Remove apples, serve along side french vanilla ice cream, and don't forget to drizzle the juices from the dish over your ice cream! Serve hot, and enjoy!



The great thing about this recipe is that you can play with ingredients and customize it to your liking.
