Parking Lot Chip Dip Recipe




Hello foodie friends! Have you heard of the parking lot chip dip? No? Let me set it up for you. You're standing in a Target parking lot chatting with a friend. Things are going fine and then a car slowly pulls up. "Oh boy..." you'll think to your self, "I hate giving directions." An elderly lady is driving and with deranged eyes and teeth that will haunt you, she asks..."Do you like chips?"


You'll hesitantly say, "yes." She'll then prescribe a dip which is 1 container of sour cream + 1 packet of taco seasoning. She'll speed off into the sunset and then you'll look at your friend and start cackling like a hyena.

Today we thought we would share with you our take on this "Parking Lot Chip Dip" by giving you three easy ways to spruce it up.

Cheesy Parking Lot Dip
I decided to make my dip extremely easy. I bought a brick of Velveeta (don't judge me, it melts the best!!) and cut off two four ounce squares and popped it in the microwave until melted. Then mix in the sour cream and finally the taco seasoning (I used Taco Bell taco seasoning, and I am obsessed!). Cool in the fridge until ready to serve.

Pro tip: Save the emptied Sour Cream container and put the leftovers in it.




5-Layer Parking Lot Dip
I used my parking lot dip as part of a multi-layered dip. The additional of taco seasoning to the sour cream really livened up the sometimes bland layered dip. I used a layer of refried beans, a layer of fresh diced tomatoes, a layer of the sour cream mixed with a taco seasoning packet, a layer of avocado slices, and I topped it with shredded cheese. The key is to put this dip in a see-through container like glass so everyone can be impressed by the layering.







Vegan Parking Lot Chip Dip

I couldn't resist taking a stab at a version of this that I could eat, so I went down to my local health food store and picked up a tub of my favorite vegan sour cream- Tofutti Sour Supreme. I mixed this 12 ounce container with 4 tablespoons of the taco potion I use. The dip is delicious, and a far improvement from the plain fake sour cream.


1 tub, 12 oz vegan sour cream
4 tablespoons of taco potion
a dash of hot sauce on top

Taco Potion
3 Tablespoons of garlic powder
2 tablespoon cumin
2 teaspoon smoked paprika
2 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper

So yes, maybe that Target parking lot run-in was slightly uncomfortable, but honestly, I kind of want to impart this on someone else now. Watch out for a black dodge car when you're out and about. You never know who will be yelling out the window!
