Popeye Egg Recipe



The Popeye egg goes by many names- toad in a hole, egg in a basket, eggs in toast, cowboy egg, and one-eyed jack among others. When I was kid, though, it was always Popeye egg, and it was a family favorite for breakfast. It's an extremely simple recipe with infinite possibilities for customization. In fact, I've been toying around with the idea of replacing the bread in the recipe with a ham steak with an egg in it. For the purposes of this post, I'm going to take you back to the Popeye egg that I enjoyed as a child many mornings. There's no pretense with a Popeye egg. In fact, you can cook it, serve it, and eat it all while wearing your pajamas.

When things become hectic for the holidays, take a Sunday morning to slow down. Make an easy breakfast and stay in your PJs for as long as you can. We should savor these moments as much as we can before they're gone. I wish everyone reading this a warm and joyful Thanksgiving.

Popeye Egg Recipe:

Ingredients


A piece of your favorite sliced bread for each person
An egg for each person
About 1 tbsp of salted butter for each person
Salt and pepper to taste

Make it

1. Start heating a pan over medium heat. Drop in the butter a minute before you start cooking.

2. Cut a hole in the middle of each piece of bread. Our family tradition is that each person would bite the hole in their bread. If you want to do it a more sanitary way, you can use a the rim of a glass cup.



3. Place the slice of bread on top of the melted butter in the pan.

4. Crack the egg and drop it in the whole in the bread. Try to get as much of the egg in the hole as you can, and, for the love of all things holy, don't break the yolk!



5. Cook the toast and egg for 2-3 minutes on medium heat/medium low heat. Flip the toast very carefully and cook the other side for 2-3 minutes.

6. Remove the toast and sprinkle it with a dash of salt and pepper. Enjoy your carefree breakfast.
