This recipe is another perfect example of foods I love to make. I was going through my grandma's old cookbook when I landed on her Lime Jello Cottage Cheese Salad. I was sold immediately. I knew this would be the perfect Easter Peep Treat!! With the pastel color of the salad and the fun Peep colors, this was sure to be the perfect Peep Show Part Tres. As soon as I took my first bite I was taken to so many Easter Sundays where we'd gather at my grandparents house, eat food and then go on an Easter egg hunt in the backyard. I love nostalgia!

INGREDIENTS
• 1 box Lime Jello
• 1/2 cup of pineapple juice
• 1 can of pineapple chunks
• 2 cups of cottage cheese
• 2 cups of Peeps chopped, assorted colors
• 2 cups whipped cream
• 1/4 cup granulated sugar
• 1 teaspoon vanilla
• Nuts if desired
WHIP IT UP
This is the perfect side dish to make for Easter because it's extremely uncomplicated and absolutely a hit. We would all have seconds of this salad growing up, and it was totally an in demand dish to have.
The recipe my grandmother had called for crushed pineapple and then pineapple juice. I cheated by using the big can of pineapple chunks and draining the juice into a separate dish. Then I crushed the pineapple in the can.
Boil up the jello packet with the 1/2 cup of juice and 1/2 cup water. This makes ithe jello more condensed. Set in the fridge to cool while you move to step two.
In a large bowl combine cottage cheese, pineapple, marshmallows, sugar, whipped cream, and vanilla.
Once the Jello is cooled, but it is still liquid, fold it into the bowl with the other ingredients. Refrigerate until the jello sets.
Serve with some adorable Peep bunnies or chicks on top, and wow your guests with a classic recipe!
