
Is there a better pairing for summer than blackberry and lemon? I was thinking of all the possibilities. You could do blackberry lemonade, blackberry and lemon popsicles or lemon blackberry cake. I've got a bit of a sweet tooth and nothing is better than cobbler or crisps this time of year (Okay, I lied, I also love strawberry rhubarb pie too).
I love this recipe because it's got both a sweet and tart flavor burst. It's just so yummy! Plus, as you're baking it, the delicious smell permeates the air and makes your mouth water.
I got the crisp recipe from my grandmother's cookbook. I upped the butter (she only called for a third cup). You need that butter goodness to make the perfect crumble. It adds to the amazingness. I also topped the crisp after baking it with a simple powdered sugar glaze made with some of the excess lemon juice and milk. It was literally the icing on the "cake."

Lemon Blackberry Crisp
A perfect dessert with both sweet and tart flavors for a warm summer night.
Ingredients
- 24 ounces Blackberries
- Half Lemon, zested and juiced
- 1/2 cup Sugar
- 1/2 package Strawberry Jello
- 1 1/4 cup Flour
- 3/4 cup Brown Sugar
- 1/2 cup Butter
Instructions
Preheat oven to 375˚In a mixing bowl combine blackberries, lemon zest, lemon juice, sugar and jello packet. Stir together and and then heat on stove.Once the blackberry starts liquifying, take off burner and cool.In a mixer combine flour and brown sugar. Slowly cut in slices of butter until mixture becomes crumbled.Fill ramekin with crumble and berry mixture and then top with more crumble mixture.Bake for 1/2 hour. Let cool and then serve with vanilla ice cream.
