Oven Baked Fajita Recipe


Image MapImage MapI love fajitas. My household loves fajitas. Not just fajitas, all Mexican food really. If I had to choose one cuisine to eat for the rest of my life (and I am glad that I do not!), I would have to pick Mexican food. I would miss sushi badly, but I am sure I would make it through. Again, especially because this is a ridiculous scenario that would never happen. 




Anyway, back to these amazing fajitas! They are smokey, spicy, sweet and tangy. Basically, you cannot go wrong with this foolproof recipe. I have made it for parties, vacation group dinners, birthday dinners. There have been rave reviews. Baking fajitas in the oven is the only way I cook them anymore. I have used my own seasoning, and I have cheated and bought packets, both work fabulously, although I have a preference for my own spice mix to that which is sold in stores. You might be addicted to Old El Paso fajita seasoning, and that is A-OK with me. Substitute your own favorite seasoning mix, it will not affect how easy, and delicious these oven baked fajitas turn out. Try my seasoning mix out though, I think you will be pleasantly surprised. 



Confession: when I cook fajitas, I make a huge batch and eat them for 3-4 days. I would eat them for 7 days, but I am kind of a freak about food safety and I toss leftovers after 4 days. But if I had leftover fajitas, I would never toss them in the trash. I would toss them onto nachos, into burritos, on top of a salad or into my mouth. So would you!

Oven Baked Fajitas
These fajitas are super easy and so delicious. They are baked in the oven and made from chicken breast, so we can add healthy to the list. Great for parties and feeding groups of people, this is a crowd pleaser for sure.
Ingredients
  • 1 lb Chicken Breast
  • 5 tbsp of Rosie's homemade seasoning, or 1 packet of store bought mix Fajita seasoning
  • 2 Green Bell Peppers
  • 2 Red, Yellow or Orange Bell Peppers
  • 1 large Sweet Onion
  • 6-8 6 inch tortillas
  • 1/2 cup cilantro
  • 1 cup tomatos
  • shredded cheese/sour cream/guacamole, optional
Instructions
Slice the chicken breast into thin slices, the long way. Toss into large bowl.Slice bell peppers into long thin strips. Toss into bowl with chicken.Cut onions in half, and then into thin "rainbows". Toss in with chicken and peppers.Add seasoning and mix to coat.Drizzle a little olive oil into the bottom of a cookie sheet or baking dish. Dump fajita mixture into pan.Bake for 35-45 minutes, check for doneness along the way. Assemble the fajitas like little tacos, scooping a spoonful of meat and a spoonful of peppers and onions onto each shell, and top with cilantro, tomatoes and whatever else you like. A squeeze of lime is especially delicious!
