Spinach Chicken Pasta in Honey Dijon Vinaigrette Recipe

Hello food friends! If you're like me, you like to eat things that look gourmet, but that don't cost too much. What's that saying, "Champagne taste on a beer budget." I was having one of those nights recently, and I decided to see what I could do with a $5.99 rotisserie chicken from Fred Meyer. I present to you my Spinach Chicken Pasta.




Ingredients
•1 rotisserie chicken from your local store.
•1 package of pine nuts
•1 cup of uncooked "bowtie" pasta (keeping with the gourmet theme)
•1-2 handfuls of spinach
•1 8 oz container of Feta Cheese
Directions
Start by pulling apart the rotisserie chicken getting as much of the good meat off of it as possible. It's kind of a messy task, so do it in a clear kitchen area, and on a cookie sheet to avoid too much clean up.

Once you've pulled apart the chicken, begin boiling the noodles until they are to that perfect al dente spot. I really like how the bowtie pasta looks in the salad, but you could use so many different types of pasta. Might I even suggest a rotini?

While beginning to boil the pasta, prepare your vinaigrette (in a perfect world you'd have prepared this a week earlier, but I didn't know!). I followed this recipe (added in a pinch of garlic and onion), and it was an absolute hit in my house. My mom actually demanded that I make this again. I put it in the fridge for about half an hour after prepping to give it a little time to rest.

Once the noodles are complete put your five items into a large bowl and then mix together.

After mixing all of the ingredients into perfect symmetry, pour the vinaigrette over the bowl and mix again.

Voila! The easiest gourmet looking meal you can make for under $15. Plus, this makes a great leftover for lunch the next day.
