Simple Spring Pies: Cherry and Cocoa Banana Cream

Few things in life bring more joy than the first signs of spring and fresh, homemade pies. Like spring days, pies can vary so much that it's hard to pick just one favorite. I love a hot, fruit pie or a chilled and decadent cream pie. My two very favorite flavors are cherry and banana cream, so I am going to give you a very easy-to-make version of each flavor because I just love you all so much!



Cutsie Cherry Pie

What you'll need:

2- 21 oz cans Wilderness cherry pie filling
Cute-shaped cookie cutters
Ice Cream (optional)

Make it:

1. Pour cherry pie filling into the prepared crust.
2. Use the crust meant for the top to cut out cute shapes and then place them on top of the cherry filling. (See below photo)


3. Bake pie at 350 for 30 minutes.

4. Top with a dollop of vanilla bean ice cream!


Rich Banana Cream Pie

What you'll need:

1 ready-made graham cracker pie crust

1 banana, sliced

5.1 oz package of banana pudding

1/2 tbsp baking cocoa

1 cup of semi-sweet chocolate chips

1/2 cup of chopped walnuts

Make it:

1. Make pudding according to package, but add the cocoa with the pudding powder.
2. Slice the banana and cover the inside bottom of the pie crust with slices.
3. Pour the pudding, cocoa mixture into the crust and on top of the bananas.
4. Refrigerate the pie for at least 1 hour to let pudding set.
5. Melt the chocolate chips in a bowl in the microwave until melted (the timing depends on the heat level of your microwave, but watch it closely so the chocolate doesn't burn).
6. Mix the chopped walnuts into the melted chocolate, and then spread the mixture over wax paper until it's about as thick as the walnuts.
7. Place the chocolate-walnut spread in the freezer and leave it for about 1 hour.
8. Break the chocolate-walnut bark into smaller pieces and then place nicely on top of the pudding.
9. Enjoy your decadent creation lavishly!
