Homemade Irish Cream!

This weeks post is brought to you by St. Patricks Day!

In case you were wondering, I am fully aware that St. Patrick's day was Monday, I totes wore green to work, and ate corned beef hash for dinner. I even highfived a leprechaun! And I was completely inspired to start a new feature- Fancy Drink Fridays. By now I'm sure you've noticed that I like a good fancy drink, and thus today's special feature was born. 

So let's get straight to it.

It's so simple!


Only 6 easy ingredients! 


Vanilla extract, canned coconut cream, irish whiskey, brown sugar, cocoa powder and espresso.

The process is super easy too. I threw the coconut milk in a big mason jar- quart size, and warmed it up just a little- 30 seconds max and then dissolved the brown sugar in it with a little shake. Then added everything else,  gave it another shake and threw it in the freezer to chill. Wha-laa! That's it! 

Next I filled a sprinkle rimmed glass with ice, then poured this delightful concoction over the top and took it outside to enjoy in the sun. I don't really remember what the real Baileys Irish Cream tastes like because it has been so long since I last drank it, but even without the comparison I thought it was delicious and so did Sarah! Two dairy free girls completely satisfied- check!
