Hello foodies! As you may know, I recently acquired a new KitchenAid Stand Mixer (which you can read about here), and I have been obsessed with using it for everything. I've made breads, butters, cookies, but my favorite thing has been whipping up some fresh Alfredo sauce. I have always liked Alfredo, but when you make it yourself, I think there's a real love that happens. I thought I'd give a shot at making a special spinach Alfredo to show you guys how quick and easy it can be!
::Sauce::
•8 oz baby spinach
•2 1/2 cups heavy whipping cream
•2/3 cup shredded Asiago cheese
•2/3 cup shredded Parmesan cheese
•2 garlic cloves pressed
•2 tspn sea salt
•1 tspn pepper
(To pair with the sauce have about 2 cups of spiral pasta, 3 chicken breasts filets and steamed broccoli)
Directions:
Start by cutting the chicken into small strips and then browning it in a pan on the stove. At the same time, begin bringing pasta to a boil.
Add all the sauce ingredients into a bowl (preferably one that attaches to a stand mixer). Using the whisk attachment in place, turn the mixer on to speed 2 and let go for about ten minutes.
Warning: When the mix is at the right whipped consistency it will look like A LOT of sauce, but don't worry when we heat it up it will come down in size. You'll also notice it takes on a light green color when it's been mixed properly.
Place the whipped spinach mixture in a medium sauce pan and bring to a boil. It will become very liquified. Once the sauce begins to froth remove from heat and let stand for 5 minutes.
While the Alfredo sauce is standing, drain noodles which will be cooked to perfection at this point and add to browned chicken strips. Make sure that the noodles and chicken are evenly spread throughout pan.
Finally, once the sauce had had some time to stand, pour over chicken and pasta and turn over in the pan a handful of times to allow the Alfredo to evenly grab on to it's hosts.
Optional: Top with steamed broccoli like I did for a great finish.
Add a pinch of grated parmesan to the top of the pasta, and voila! it's done.
This dish is the perfect afterwork meal because it took me about 30 minutes to complete. The sauce is full of flavor while being light and was a hit at the dinner table.
