Dairy Free Chocolate Shell on Banana Ice Cream Treats


Whenever I make something and it is extra tasty I tell people around me that it is awful in an attempt to not have to share.  These are TERRIBLE!  Jk.  Being a dairy free girl that also avoids soy, it is hard to find something creamy and frozen I can eat.  This summer I have been making banana ice cream like it is going out of style.  I just freeze ripe bananas and blend in my Vitamix.  Perfect treat but adding this chocolate shell makes them so much better.  I feel the need to mention two things.  1) I am not a big banana fan and 2) coconut is my fave favor, but theses are great!

Ingredients:

For banana ice cream
  • 4 ripe bananas
  • 4 drops of vanilla
For chocolate shell
  • 1 cup of dark chocolate chips
  • 1 tablespoon coconut oil
  • pinch of salt
For banana ice cream
  1. Peel and chop bananas.  Freeze over night.
  2. Blend frozen bananas in a blender until smooth.  (You can blend then freeze if your blender cant take it.)
  3. Pour blended banana into a pie pan or baking tray depending on how thick you want your treats.
  4. Freeze for a few hours or over night until set.
  5. Once set flip the banana "pie" on to a cutting board and cut into squares.
  6. Places banana ice cream squares on a cooling rack over some wax paper.
  7. Heat chocolate chips, coconut oil and salt in the microwave for 30 seconds and stir.  If there are still lumps heat for another 10 seconds.  Then stir, stir, stir.  Any more lumps will melt in.
  8. Once the chocolate sauce has cooled pour over banana squares.
  9. Return to the freezer to set chocolate.
  10. Enjoy!
