
Well, this recipe gives a whole new meaning to Chocolate Chips. I have had chocolate dipped chips before, my mother searches them out, she knows which shops carry them, and will return for them time after time. So, it wasn't a hard decision to make them for her birthday party weekend, that I returned from yesterday, and are still recovering from today.
The ingredients are pretty straight forward- potato chips for dipping, you'll want something sturdy, and salty. I have never had a seasoned potato chip this way but can you imagine a chocolate dipped Dorito? It might be good! You'll need chocolate for melting, and some oil for thinning the chocolate, and then optional would be some fancy salt to sprinkle on them for added saltiness, or (not pictured, but used) sprinkles.
The basics on melting chocolate: temper that sh!t. You can do this over a double boiler, or in the microwave. Instructions for the double boiler are easy to find, I'll share my microwave directions. Place chocolate chips into a microwave safe container, then adda bout a teaspoon of a light oil per cup of chocolate. I used coconut oil, because I think the taste it imparts to the chocolate is lovely. I love using a large Pyrex measuring cup because the handle is handy, you stir this a LOT. At 50% power microwave at 2 minute intervals, stirring in between. You want to melt the chocolate until it is almost smooth, at this point, you just keep stirring because the chocolate that is melted mill be hot enough to melt the rest and completely smooth out the chocolate.
Get your chips out and start dipping.
You'll quickly develop a method. My method was plunging in the chips so that the top got covered more than the bottom, and then lightly scraping the back off on the way out of the cup.
Lay your chips out on wax paper, or parchment paper to harden, will take about an hour. This is when you can dust with salt or sprinkles. Store in airtight container until ready to serve. Enjoy!

1 bag potato chips
2 teaspoons coconut oil
fancy salt or sprinkles *optional
Temper chocolate along with oil in microwave
Dip chips into chocolate
Lay on wax or parchment paper to harden
Dust with salt or sprinkles
Store in airtight container
The chips were a hit at the party, and my mother was overjoyed. Just the way I like her to be.
