Happy hump day foodie friends! I hope you all had a fantastic Mother's Day weekend! It was a scorcher, am I right?! Technically it was only 85˚, but my precious body couldn't handle it. I am a fairly temperature sensitive person, so as soon as it gets too hot or too cold, I get crabby. To keep myself cool, I decided I wanted a fancy popsicle. Generally, I would reach for an Otter Pop (because yes, surprise, I am 12 years old), but I wanted something special this past weekend especially for mom. Thus my idea of a frozen yogurt popsicle was born.
It's a genius idea if I do say so myself (and I do). These are relatively simple to make, but they just seem so delightful, and fun. They also give me a feeling of nostalgia because as a child, I loved to freeze my Go-Gurts. Didn't we all?
WHAT YOU'LL NEED
Popsicle molds
Yogurt of any variation (I used Greek Yogurt for mine)
Your pick of toppings (IDK if they're really toppings, but I couldn't come up with a better word)
WHIP IT UP!
I decided to try a couple of different combinations that I wanted to try with my fancy pops. From the above picture you can see I tried a Strawberry Kiwi combo, peanut butter cups and Fruity Pebbles (I also tried a fun layering technique with sprinkles that went horribly wrong, and I'd rather just forget it).
In a bowl mix in the topping with about 2-3 scoops of yogurt and mix it up real good. Then fill the popsicle molds. Repeat until you've fulfilled your desired number of fancy pops.
Freeze for at least five hours. Carefully remove from mold and snack away.
Special thanks to my mom for being my hand model in the picture above, her nails look much better than mine, to be honest. I hope you find these fancy pops... tickle your fancy and that you'll try it for yourself. I used a plain vanilla yogurt, but I could imagine all the flavor possibilities of using any yogurt you have around! Now that we're back to rain, I'm a bit more comfortable, but I'm sure grateful that I had these popsicles around this past weekend.
