Egg Bake: Queen's Puff Recipe


I can't believe it is almost Mother's Day already! Where did early 2015 go? I've got a big plans this weekend- we are having out of town guests Saturday for a BBQ, and then Sunday morning I am hosting a big Mother's Day breakfast for my mother (love her!), my mother-in-law (love her too!) and even my husband's aunt (from out of town) and her daughter. It's a first for me, as we usually do a low-key lunch or dinner, but this is the plan that came together and I am running with it! All the ladies attending are very special to me, and luckily they don't put much pressure on me to be perfect, on time, or well dressed. Phew! Spoiler alert- I am not making this recipe for my gathering- there is simply too many people attending, but I had already flushed this idea out, and lucky for you, I took pictures to share!
This is one of those recipes you have probably never heard of, and if you take the bait and make it, you will keep in your wheelhouse. It's a great way to use leftover mashed potatoes after every major holiday. And it's just one of those meals that every time you throw it together you feel like Martha Stewart. It's similar to quiche and frittatas, but just a little different.
 I didn't have any leftover mashed potatoes, so I had to whip some up.

 Fresh herbs elevate any recipe.


 Eggs, mushrooms and onions, how can you go wrong with that!

INGREDIENTS
a dozen eggs, scrambled
3 cups mashed potatoes (I used this recipe, YUM!)
12 ounces breakfast sausage links, browned
1 medium onion, chopped 
12 ounces sliced white mushrooms
1/3 cup flour
1 tsp baking powder
3/4 tsp salt
3 tbsp fresh rosemary and thyme, chopped
2 tbsp fresh cracked pepper
couple tablespoons of olive oil

MAKE IT!



Start by browning the sausage links. Brown for about 7 minutes, or until they are starting to turn golden brown, no need to cook all the way through at this stage, they are going to be baking later. 



Place sausage in a bowl, and continue using the same pan to sauté the onion and mushrooms. Set these aside once onions are translucent.


Whisk the eggs with the flour, baking powder, salt, pepper and herbs.

In a baking dish (or same pan if using cast iron) place mounds of mashed potatoes and then spread the browned sausages in between.

Next, add the sautéed vegetables on top of that. 

Pour egg mixture over the top of the potatoes, sausage, onion and mushrooms. 


Now, you can sprinkle a cup of shredded cheese on at this point, if you are into that. 

Bake at 375 until the potatoes are bubbling, 20-25 minutes.




Because I couldn't help myself, i took this one step further, and made a sandwich out of the Puff. It was amazing!
