Since we all like different toppings, amounts of toppings, order of topping placement, and even degrees of doneness, making our own unique pie is the best option. While making your own pizza from scratch isn't as easy as buying a frozen one or having one delivered directly to your hotel room, it allows you to play out your wildest fantasies.

Pacific Honey Rose Mini Pies Recipe
Hello food friends! I don't know about you, but I love miniature things. They are absolutely adorable and make life just a little bit better. Miniature dogs? Yes please! Miniature cupcakes? Obvi. So why not have a mini pie?
I recently saw a picture in a coupon/ad for Pillsbury Biscuits that showed miniature pot pies. "How adorable!" was my initial reaction. However, I am not a fan of pot pie (sue me). I did see the potential for having cute little pies that were basically "pop-able." Thus came the idea for a mini pie.

Broiled Grapefruit with Honey and Salt
Grapefruits are a delightfully tangy citrus fruit. I used to just slice them up and eat them all the time! So much citrus got to be too much for me. I loved them but they no longer loved me. The other day I was missing my sweet ruby friend and decided that maybe broiling with honey might help with the intensity. It sure did! I can now enjoy grapefruit again and the salt makes them even sweeter.

Summer In A Cup
This past week was a rough one. I was still recovering from the flu and trying to play catch up in my life and house with all the things that got out of my hands while I was too sick to do anything about it. My house has yet to bounce back from hurricane Christmas, so that's been a struggle. But while trudging along Ionesco piece at a time, I started daydreaming about summer. Fresh air and sandy beaches, camping trips and cook outs, Popsicles and lemonade.
Thoreau said it best: "One must maintain a little bit of summer, even in the middle of winter". Thoreau and I, we share the same sentiment. And I believe that these daydreams of what the summer ahead holds are what will get me through the next 3 months till spring, when I can get out into my trailer again and experience some freedom. Now don't get me totally wrong, I do love wintertime as well. Snuggling up, taking shelter from the rain, keeping cozy, family time and boots are all pluses for fall and winter. But the fun, the real fun, waits for summer.

The Ultimate Breakfast Burrito Recipe
Hello foodie friends! Do you have one of those breakfast meals that you've had at the same place, but it's been a long time and you miss it? I have been experiencing this situation lately. Growing up I used to love to go to the Molalla Bowling Alley and get myself the breakfast burrito whenever I had the chance. It was good greasy food that was perfect in every way! I haven't had one in probably five or more years, and it's definitely been missed. I decided to take a whack at it and attempt to make my own version of the deluxe burrito.

Sauteed Spinach with Garlic & Bacon
Hiya pals! I am not sure if I have made it clear that I love veggies... Spinach is amazing! It is good for you and tastes delicious. Add garlic and bacon and you have a super winner. This dish is really fast and easy. Great as a side dish or all on its own as a snack. What makes this dish extra easy is the precooked bacon and the garlic press. I love my garlic press and use it all the time.

Quick & Easy Chicken Noodle Soup
Hey everybody! It's Rosie here, reporting that I am alive and, well let's leave it at alive, shall we?
My husband and I rang in our first New Year married in style. And by in style I mean laid up on our couch, hand in hand, under layers and layers of blankies, watching the ball drop. We were determined to make it to midnight.
So, we both got the flu. And as awful as it has been, I am finally on the mend. At the ripe age of 30, i have gotten sick many times without my parents to take care of me, however this time, with the both of us sick, and seeing as it has lasted 8 days as of today, I had a few new experiences taking care of myself. First of all, cooking and cleaning up after myself when I am sick is the worst. Specifically, the two times I stood over my sink washing dishes, for the 3 minutes at a time that I could handle doing so, was atrocious. Seriously, there should be a law against having to do dishes when sick, or a service that you can hire that come in dressed in gas masks and clean suits to keep house for you.
Doing the dishes, wasn't much worse that having to cook for myself, because on about day 5 I declared that I could not, would not eat another can of chicken noodle soup for as long as I live (or the next 6 months). So i decided I would push through the pain, and make some chicken noodle soup. However, I knew I needed to work smarter, not harder, and do as little of the work as possible. So I bought a rotisserie chicken, used stock, and utilized my amazing food processor to do the chopping for me.
