The Ultimate Breakfast Burrito Recipe

Hello foodie friends! Do you have one of those breakfast meals that you've had at the same place, but it's been a long time and you miss it? I have been experiencing this situation lately. Growing up I used to love to go to the Molalla Bowling Alley and get myself the breakfast burrito whenever I had the chance. It was good greasy food that was perfect in every way! I haven't had one in probably five or more years, and it's definitely been missed. I decided to take a whack at it and attempt to make my own version of the deluxe burrito.



Doesn't that look divine?! Let's take a peek at how it's made!

Ingredients
  • 6 Large Baby Red Potatoes (obvi)
  • 6 Eggs
  • Small bundle of Green Onions
  • Shredded Cheese, preferably cheddar
  • Garlic Salt
  • 4 Large Flour Tortillas
  • Salsa
  • 1 package of Turkey Sausage
  • Sour Cream

Directions

Start by rinsing the baby red potatoes and then using a cheese grater, grate the potatoes into a hash brown like look. You will want to give yourself a little bit of time for this part (I think it took me about 20 minutes). It may take a little bit longer but the freshness beats the frozen hash browns, trust me.

Once you've completed that, chop up enough green onion to give the hash browns flavor, but not enough to over power it.



In a pan, combine the potato shreds and green onion with a little bit of garlic salt and butter and begin cooking up.

While the hash browns are starting in another pan start cooking the turkey sausage. I used four links in each burrito (which seems like overkill, but it's the ULTIMATE remember).

Now that both that potatoes and sausage are going, you can start scrambling your eggs. I just added a pinch of garlic salt and milk to the eggs to make them flavorful and fluffy.

After everything has cooked, take a tortilla and place it on a plate and put it in the microwave for about 15 seconds to heat it up. Then dish up the burrito. I say the best way to do it is to put the hash browns in first, then add the egg and sausage. Sprinkle a little cheese inside and call it good.

Wrap up the burrito, serve it with salsa and sour cream on top, and enjoy!
