Summer In A Cup

This past week was a rough one. I was still recovering from the flu and trying to play catch up in my life and house with all the things that got out of my hands while I was too sick to do anything about it. My house has yet to bounce back from hurricane Christmas, so that's been a struggle. But while trudging along Ionesco piece at a time, I started daydreaming about summer. Fresh air and sandy beaches, camping trips and cook outs, Popsicles and lemonade. 

Thoreau said it best: "One must maintain a little bit of summer, even in the middle of winter". Thoreau and I, we share the same sentiment. And I believe that these daydreams of what the summer ahead holds are what will get me through the next 3 months till spring, when I can get out into my trailer again and experience some freedom. Now don't get me totally wrong, I do love wintertime as well. Snuggling up, taking shelter from the rain, keeping cozy, family time and boots are all pluses for fall and winter. But the fun, the real fun, waits for summer.

And of course all of these things are best done in warm summer air!

So, Saturday night, after slaving all day, I decided to mix myself up a glass of summertime, and take it to the burn pile that my husband had been tending all day in the backyard, and pretend like it was, in fact, summer. A very chilly night in June possibly. 


Ingredients:

Ice (this is a given)

Something bubbly (I used Perrier pink grapefruit sparkling mineral water, but I can think of a ton of  things that would work: Talking Rain, club soda, 7Up, champagne)

Juice (again, anything will work, I used some passion fruit juice, because that's what I had)

Lime juice

Optional: Malibu Rum



Process:

Add ice
Add juice
Add bubbly
Squeeze in lime
Stir

Or

Add ice
Add Malibu Rum
add juice
Add bubbly
Squeeze lime
Stir



What makes this recipe easy is that it is so versatile and simple. Just keep all the parts equal and you will have a refreshing drink! 

Also, don't forget about garnish! I personally love adding garnish to a drink, I feel like it just gives it that little something extra that makes me feel like I am drinking something special, something made with love. Summer love of course. 


Garnish ideas: lime, mint, berries, watermelon wedge- get creative!
