I was so excited to tackle this new creation, and I immediately knew that the topping had to be Holly's Sausage Breakfast Gravy! Be sure to check that recipe out to know how to make the gravy for this recipe.
I got a little overzealous and excited to try this recipe and I ended up coring the potatoes before I cooked them. Don't do that. Follow the directions. Bake the potatoes for about an hour in the oven prior to slicing and scooping. It's much easier to work with, but also know that it worked out for me. I just ended up baking them for a half hour before stuffing them.
Honestly, breakfast is so great. I love breakfast for breakfast, breakfast for lunch and breakfast for dinner. Adding sausage gravy, potatoes, eggs and cheese into one dish is OOTW! (That means out of this world) The entire time I was making this dish, I wanted to eat it! It smelled and looked so good.
The picture above is the different stages of stuffing. First you stuff the potatoes with the eggs and potatoes, top with cheese and then cover in gravy. I didn't have toothpicks so I used wood skewers to help prop them up. Honestly, I'm just very much a problem solver.

Potato Breakfast Boats
A new staple for breakfast lovers. These Potato Breakfast Boats are simple to make and are sure to please.
Ingredients
- 3 Large Russet Potatoes
- 1/4 cup Sweet Onion, diced
- 4 Eggs
Instructions
1. First start by baking the potatoes in the oven for about an hour. Let cool.2. Cut potatoes in half (hot dog style) and scoop out the insides.3. In a pan scramble eggs, potato insides and diced onion.4. Follow instructions for preparing Sausage Breakfast Gravy 5. Stuff potato skins with egg/potato mixture, cheese and top with sausage gravy.6. Bake at 375˚ for 30 minutes.
