Gorgonzola Ranch Dressing Recipe

Lately I've been thinking about flavor combinations. You have your basics: peanut butter with jelly, tomato with basil, and tequila with lime. Then there's the complicated combos like cherry with chipotle. Some flavor marriages are disappointing or downright disgusting, but there are some weird combinations that come together like magic in your mouth. A great example: arugula and prosciutto.

Typically, arugula isn't my favorite green. It is bitter, and it looks like a weed. When it's combined with prosciutto, though, it transforms into the perfect backdrop for that salty delicious meat. New favorite lunch staple right here! To push it one step further, though, I decided to add in another combination of flavors- gorgonzola cheese with ranch seasoning.

You might be thinking it sounds like a bit much. In some ways, you are right. The gorgonzola ranch dressing screams for attention as soon as it hits your tongue. It would be perfect on a simple iceberg wedge or with some boiled golden potatoes. On a bed of arugula and prosciutto, though, you get a party of strong flavors that just work. Try it for yourself! The Gorgonzola Ranch Dressing is a man wearing a bowtie with jeans- fancy and casual at the same time.

This recipe is very easy to make, and it doesn't require any cooking or prep time. All you need is a big bowl and stirring spoon. I love recipes that seem complicated, but are extremely simple like this. The most important part is to get a good gorgonzola with the right amount of moldiness.

When you have your ingredients gathered, simply combine the base ingredients- the mayo, buttermilk, and seasonings and then add the gorgonzola. Don't over stir once the gorgonzola is added because you want it to stay chunky. The best part is biting into a pungent piece of cheese when eating your salad. Why is it that gorgonzola is so delicious when it looks like something that should be tossed in the trash?

After you've mixed everything together, store the dressing in a sealable container for when you're ready to use it. I made about 6 salads out of this recipe. I also used it as a dip for some boiled golden potatoes. The moldy cheeses- specifically bleu and gorgonzola- pair so well with warm potatoes.

Mainly, though, I enjoyed this dressing on a simple salad of arugula, baby spinach, and strips of prosciutto. I had this for lunch a few days, and I felt satisfied. The nice thing about a lunch like this is that I don't feel like I need a nap afterwards. It's slightly energizing because of the strong flavors.

Gorgonzola Ranch Recipe
A flavorful and chunky dressing.
Ingredients
  • 4 ounces gorgonzola crumbles
  • 1/2 cup mayonnaise
  • 1/3 cup low fat buttermilk
  • 2 tbsp ranch dressing seasoning
  • 1/4 tsp coarse ground black pepper
Instructions
In a large bowl combine mayonnaise, buttermilk, ranch seasoning, and black pepper.Mix ingredients until smooth. Add the gorgonzola to the mixture and stir about 6 times until the crumbles are distributed evenly.Pour the dressing over the dish of your choice.
